Why did Jesus change Simon's name to Cephas (Peter) in John 1:42...?

Because Peter (or Petra) means "rock" and Jesus said Peter was the rock he would build his church on. I've never really understood anybody arguing it. Even protestant scholars agree Peter founded the church. And why would Jesus change Peter's name and then immediately say "On this rock I will build my church" if he was talking about Himself?
